Last week The Onion Pub & Brewery officially opened their newly expanded space.
Craft beer has never been hotter and it is evident at the Onion. Most nights the restaurant is filled to capacity. The Great Hall, the beautiful banquet space in the back of the original structure, is booked for weddings and special occasions most weekend nights through 2015.
The Kainz family who own and operate The Onion Pub & Brewery hosted a celebratory event in the new production space for family and friends. Grateful for their success and the continued support they receive, the Kainz have worked hard to get to where they are now. They are longtime residents of 60010.
Brewing great ‘Onion’ brand beer started in the late 1990’s in a small industrial space just down the street from their current location. Passionate about the business and making the best beer possible – their outside distribution grew from small local retailers carrying their product, to a greater national demand. They have also made great efforts to be environmentally friendly – setting standards for themselves that follow their personal principles.
Recently winning an award from the Barrington Area Conservation Trust, the family has always practiced what they believe. When they first built the main restaurant and brewery with environmentally-friendly product, the restaurant faced a large water retention pond that was previously a gravel pit. The Kainz family not only helped clean up the pond – but also have made the area part of a greater conservation effort. Eliminating invasive species and surrounding the water with native plants has transformed the area making it a beautiful vista to be seen not only by their patrons but their neighbors as well.
Quality practices without compromise show not only in and around their facility but in their product as well. Exceptional beer is driving their growth.
We asked them about the business expansion and the demand for product:
What was the catalyst for the expansion?
- Demand for our product exceeded our current capacity and we needed more storage space for packaging. We also needed a custom-designed brew house that allows us to focus on bigger more high gravity beers like Hop Slayer and Drago. We are now able to increase our production by 400% and grow for years to come.
What do you think is behind the growing interest in Craft Beer?
- Americans are seeking bolder beer flavors and are recognizing that fresh local beer has superior taste. Small breweries are capable of producing many different beer styles and flavor profiles due to smaller batches, which is what people want. People are also looking for a beer that is tied to a place, which is what we can deliver.
The Onion offers tours of their beer production on the first Saturday of each month.
